Cinnamon as we know it is extracted from the rind (cortex) of the branches of the tree. The "harvest" takes place every two years, which farmers cut all the branches of diameter up to 5 cm and then peeled. They remove the inside of each hull and use the outer cortex and they processe it until it is brown. The Chinese cinnamon is strongly aromatic and softer than the classic Indonesian cinnamon .
